Do I die if I have 2 Serious Wounds and an attack gives me another Serious Wound?

No. You die only when you take a Wound while you already hold 3 Serious Wounds. With 2, a third is simply taken, unless the card has its own death condition. A Light Wound that overflows into a Serious Wound counts as the third one.
