In Part 1, does bread count if a guest arrives before you have the bread?

No. When a guest reaches Bag End their bread symbol must already be marked to score the bread points. If not, you fill in the bread symbol and its points box anyway to show those points are lost, and bread gathered later cannot fill it. Note: mark bread you collect on a path before marking guests you connect.
