Do you have to find all the guardians to finish The Offering to the Guardians?
No. The disabling of a guardian is temporary, so you can revisit one if you cannot find all of them, and finding them all is only encouraged. Using the same guardian twice is not forbidden, though the scenario is more interesting if you do not.
