If I move noisily and then shoot, does the soldier I kill count as having heard me?

Yes, if you move first: you must point out every defender adjacent to your route right after the move, including the soldier you are about to shoot. The shot then removes that soldier, so it hears nothing further; the other defenders still do. Alerting is part of the move, so it happens before you shoot.
