Do I still gain 2 spirit if I do not defeat the foe or finish the dungeon?
The designer confirmed the spirit is earned by taking the action; the rulebook adds that removals are not heroic actions.

Yes. The 2 spirit comes from taking the heroic action, so you get it for a battle or quest whether or not you win, including when you leave a dungeon unfinished or retreat from the adversary. You get none for removing a foe by an effect, or if you could not legally take the action at all.
