Res Arcana
Can you take essences off the Vault or Windup Man and also keep adding to it in the same Collect step?
The designer answered this directly in a BGG reply.

No. For the Vault and Windup Man you must choose: leave everything on the card and get its Collect bonus, or take everything off and get no bonus. These cards' own rules override the general Collect rule, unlike cards such as the Necromancer.
