Does one veggie card count for every point card I own, and can a point card score more than once?
The rulebook says each veggie scores each point card and cards may score multiple times.

Yes to both — every veggie in your tableau is used for each point card, and a point card may score multiple times. Players add that a single veggie can't count twice toward the same condition on one card.
