How does Wolf Rider's shadow effect work and can I kill it?

Its shadow effect interrupts the attack: Wolf Rider attacks without being engaged and is treated as an enemy in play during that attack. It can't be attacked normally while unengaged, but damage effects against an enemy in play, like Sneak Attack with Gandalf, can kill it.
