Can I avoid Hummerhorns' 5 damage by engaging it myself, and does defense reduce it?

The rulebook says defense does not absorb card-effect damage and that engagement is mutual however it happens.

No on both. When an enemy engages you, you also engage it, so its 'when engaged' damage triggers even if you choose to engage it. The 5 damage can go to any hero, even one with fewer than 5 hit points, and defense doesn't reduce it because it is not attack damage. You can't take actions between the engagement and the damage.
