Can resources found on the hunt or in a showdown be used then, and can stored resources be brought along?

Yes. Resources a survivor carries can be spent or activated at any time during the hunt, and resources with special rules can be used at any time in any phase. Players generally avoid interrupting a roll or a card mid-resolution. Once resources are stored at the settlement they can't go back out on a hunt or showdown, so Fresh Acanthus works in the fight where it was found but not in a later one, though it can be turned into Dried Acanthus (a gear card) in the settlement.
