If the defender plays Escape, can the attacker keep moving and attack again?

Yes. Escape cancels the battle, so the attacker can continue with any remaining movement, including following the escaped troop and attacking again (optional). The rulebook's page-6 clarification says the same. A 2020 summary of the 1.5 rules says the attacker's move now ends when it enters the defender's space.
