Do starting workers need to be assigned for the Company to produce, since they start uncommitted?
Several experienced players agree; no official ruling.

They are already assigned. Uncommitted just means the worker is standing up, not unassigned. Setup places workers on their companies by player count, and assigned workers are paid whether or not they are committed.
