When do I get the Food from a Travel Destination, and what if it exceeds 30?

Immediately. The tile stays on the Vehicle (blocking those spaces) until Vehicles are emptied. Food caps at 30 and excess is lost (the rulebook says so for Bremen). Posters who raised the case of gaining little or no Food read the tile as still usable, since you must only sell at least one item.
