Can you gain a Grand Market with Horn of Plenty while a Copper is in play?
Yes. Grand Market's restriction applies only to buying it, not to gaining it, so Horn of Plenty can gain it even with a Copper in play. The same holds for gains from Remodel or other gain effects.
