Can I swap salt for another good and then sell that good with a Mercator?

Yes. Exchange the salt first and then sell the resulting good as normal during the Mercator's trade. The designer's example swaps salt for wine and sells both. The swapped good cannot be sold at any other moment; selling happens only when a Mercator allows it.
