How does Clan MacEwen's Beer ability work?
The publisher account answered this in several threads; the rulebook only points to the publisher site for Kickstarter tiles.

When you fulfil a contract that gives Hops, you may discard one Grain per Hops unit (maximum 3 per contract) and gain money for each; the current value is £9 per Beer at the publisher's Kickstarter-tile page, which could be rebalanced. There is no Beer token or whisky, no distillery is needed, the Hops are not spent (they still score), and you do not receive Grain from the contract. You can do it at any point among that contract's other bonuses.
