If a card says 'discard a card to get X', can I skip the discard and still get X?
The rulebook uses Sleight of Hand as an example and the designer confirmed it for Apothecary.

No. You must really discard a card from hand to get the benefit. If you have no card left, you get nothing, so playing such a card last (Sleight of Hand, Apothecary) simply wastes it, while playing it earlier forces a discard if you want the effect.
