For the dog-and-sheep rule, is a large pasture one space, and can I split dogs across separate meadows?

A large pasture counts as one space, so dogs on either half add together and it holds one sheep more than its total dogs. Separate meadows or pastures are handled independently, so putting dogs on different spaces can shelter more sheep in total than stacking them on one space.
