The 3-player rules say you win by personally eliminating your target and otherwise the survivors play on to be last standing.

Only if the hunter eliminated his own target. Each player wins by personally dealing the last life point to his target. If the first player out dies to anyone else or to arrows or Dynamite, nobody has won yet, and the two survivors play on until one is the last standing.
