Can I swap a Fireplace for a Cooking Hearth, and does a Simple Fireplace count?

Yes — on a Major Improvement action you can return a Fireplace instead of paying the Hearth's clay (it is either/or, not both). A minor-improvement Simple Fireplace counts as a Fireplace but is discarded from the game, not put back on the supply board.
