Do I have to take a crop from every field in the field phase, and when can a field be sown again?
The rulebook's Field Phase requires harvesting every field.

Yes — you must take exactly 1 crop from each field, skipping none. Leftover crops stay on the field until later harvests, and the field can be sown again only after it is completely empty. In the end-game scoring, crops still on your fields count.
