Does any card ending in Fireplace count as a Fireplace, and is Oriental Fireplace a minor or major?
Yes — any card whose name ends in Fireplace counts as a Fireplace for prerequisites. Oriental Fireplace is both a minor and a major improvement, and when returned to build a Cooking Hearth it leaves the game rather than returning to the board.
